Christmas ribs, that is what our family calls them. The ribs are often slowly grilled in the cold Christmas Eve glow of our home, with the scent of garlic and rosemary filling the crisp outdoor air. Gathering around the table to enjoy the sweet and flavorful taste and smell of this grilled rib recipe is a family tradition.

Ingredients
  

  • 2 lbs pork back ribs
  • 2 garlic cloves, minced minced
  • 2 tbsp fresh rosemary, chopped have extra fresh rosemary for grilling with tomatoes
  • 2 tbsp extra virgin olive oil
  • 1 tsp salt
  • 1/2 tsp hot pepper flakes
  • 1/2 tsp ground black pepper
  • tomatoes for roasting

Instructions
 

  • Remove the membrane from the underside of the ribs, if attached.
    2 lbs pork back ribs
  • In a large dish, combine the garlic, rosemary, oil, salt, hot pepper flakes and pepper.
    2 garlic cloves, minced, 2 tbsp fresh rosemary, chopped, 2 tbsp extra virgin olive oil, 1 tsp salt, 1/2 tsp ground black pepper, 1/2 tsp hot pepper flakes
  • Add the ribs and rub all over with the spice mixture.
  • Cover and refrigerate for 1 hour or up to 24 hours.
  • Place ribs on medium hot grill, close the lid and cook, turning once, until the meat is tender and pulls away from the ends of the bones, about 1 hour. (30 minutes each side)
  • Roast tomatoes, brushed in olive oil, for last 10 minutes of grilling, rotating periodically.
