This grilled pineapple recipe with lime mint sauce is a simple, pretty dessert that makes an already delicious fruit zingy and bright.

Ingredients
  

  • 1 ripe pineapple cut into spears
  • 1 tsp olive oil
  • 1 cup fresh mint
  • juice and rind of 2 limes
  • 3 tbsp cane sugar

Instructions
 

  • Heat grill or pan to high heat.
  • Brush pineapple spears with olive oil.
    1 ripe pineapple, 1 tsp olive oil
  • Place pineapple on the grill and cook for 3 to 5 minutes on each side, or until dark grill marks appear. After both sides have been grilled, remove and let rest for 3 minutes.
  • Blitz the mint, lime juice and rind, and sugar in a food processor or blender, adding a little water if needed. Sauce should be chunky, don't add too much water.
    1 cup fresh mint, juice and rind of 2 limes, 3 tbsp cane sugar
  • Top the pineapple with the mint sauce and serve.
