Drunken Lager Ribs

Ingredients for Drunken Lager Ribs:

Recipe makes 8 serving
  • 4 pounds pork spareribs
  • 2 1/2 tablespoons garlic powder
  • 1 1/2 tablespoons white pepper
  • 1 1/2 tablespoons seasoned salt
  • 1 tablespoon onion salt
  • 1 teaspoon dried oregano
  • 1/2 cup distilled white vinegar
  • 12 (12 fluid ounce) cans or bottles premium lager
  • 1 (20 ounce) bottle ketchup
  • 1 (10 fluid ounce) bottle Worcestershire sauce
  • 1 1/2 cups maple syrup
  • 1 cup brown sugar
  • 1 cup liquid smoke flavoring
  • 1/2 cup margarine
  • 1/2 cup apple cider vinegar
  • 1/2 cup honey mustard

Directions:

  1. In a medium bowl, mix garlic powder, white pepper, seasoned salt, onion salt, and oregano.
  2. Place ribs in a large roasting pan, and rub evenly with the garlic powder seasoning mixture to coat. Pour distilled white vinegar and 1/2 the beer, or enough to cover ribs, into the pan. Cover pan and marinate ribs in the refrigerator 8 hours, or overnight.
  3. Prepare an outdoor grill for indirect, medium heat, and lightly oil grill grate.
  4. In a large saucepan whisk together remaining beer, ketchup, Worcestershire sauce, maple syrup, brown sugar, liquid smoke, margarine, apple cider vinegar, and honey mustard. Bring mixture to a boil. Cover, reduce heat, and simmer 15 minutes, or until thick sauce has formed.
  5. Remove ribs from the marinade mixture, and coat with the sauce. Place on the prepared grill, and cook 1 1/2 to 2 hours, to an internal temperature of 160 degrees F (70 degrees C). Brush frequently with sauce while cooking.

Kansas City Style Pork Back Ribs

Kansas City Style Pork Back Ribs are a delight. A great recipe for sweet and spicy ribs that are tangy and grilled to perfection.

Ingredients:

Makes 5 servings
  • 3 slabs of pork back ribs
  • 1/2 cup sugar
  • 1/4 cup paprika
  • 3 tablespoons seasoned salt
  • 2 tablespoons chili powder
  • 2 tablespoons ground black pepper
  • 1 tablespoon celery salt

Directions:

  1. In a jar with a tight-fitting lid, mix together sugar, paprika, seasoned salt, chili powder, black pepper, celery salt, onion powder, garlic powder, ground sage and dry mustard. Place the lid on the jar and shake jar to combine spices thoroughly. Set rub aside.
  2. In small saucepan over low heat, stir together honey and barbecue sauce. Heat through, stirring occasionally for about 5 minutes. Set barbecue glaze aside and keep warm or at room temperature before using. (If storing for more than 2 hours, cover and refrigerate. Reheat before using).
  3. Pat ribs dry with paper towels and season with spice rub, using appx. 4-6 tablespoons for each slab. Grill over indirect heat in a covered grill or smoker for 1 1/2 to 2 hours. Turn ribs once during cooking, about halfway through grilling. Ribs are done when the meat is very tender (insert a knife between ribs to check, they should pull apart fairly easily.) About 20 minutes before ribs are done, baste heavily with barbecue glaze. If you like your ribs extra sticky, baste again 10 minutes before removing from the grill.

Original recipe makes 8 servings
  • 4 pounds pork baby back ribs
  • 2 cups ketchup
  • 1 cup chili sauce
  • 4 tablespoons vinegar
  • 1/2 cup packed brown sugar
  • 2 teaspoons dried oregano
  • 2 teaspoons Worcestershire sauce
  • 1 dash hot sauce
  • salt and pepper to taste

Directions

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Season the ribs with salt and pepper and place in a shallow baking pan. Brown in oven 15 minutes. Turn over, and brown another 15 minutes; drain fat.
  3. In a medium bowl, mix together the ketchup, chili sauce, vinegar, brown sugar, oregano, Worcestershire sauce, hot sauce, and salt and pepper. Place ribs in slow cooker. Pour the sauce over ribs, and turn to coat.

Oven Baked BBQ Pork Ribs

Ingredients for Oven Baked BBQ Pork Ribs:

Makes 4 to 8 servings
  • 4 pounds of pork spareribs
  • 2 cups sliced onions
  • 2 cups ketchup
  • 2 cups water
  • 4 teaspoons salt
  • 1/2 cup white vinegar
  • 1/2 cup dark brown sugar
  • 1/4 cup Worcestershire sauce
  • 4 teaspoons dry mustard

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large bowl, combine onions, water, ketchup, salt, Worcestershire sauce, vinegar, brown sugar, and mustard. Split the ribs down the center between the bones.
  3. Heat a large lightly oiled skillet over medium-high heat. Add the ribs and sear until browned. This may have to be done in a fewl batches.
  4. Place ribs in a single layer in two baking pans. Pour half of the sauce over the ribs, reserve remainder.
  5. Bake ribs in preheated oven for 3 hours. Turn and baste meat every twenty minutes with remaining sauce, using all sauce within two hours. Continue turning and basting ribs using sauce in the pan during the last hour of baking.

Ingredients:

Original recipe makes 4 servings
  • 4 pounds pork spareribs
  • 2 quarts apple juice
  • 3 cups barbecue sauce
  • 1/2 cup prepared horseradish
  • 3 tablespoons Worcestershire sauce
  • 1 teaspoon garlic salt

Directions

  1. Place ribs in a stock pot, and cover with apple juice. Bring to a boil, reduce heat, and simmer for 1 to 2 hours. Preheat oven to 350 degrees F (175 degrees C).
  2. In a medium bowl, mix together barbecue sauce, horseradish, Worcestershire sauce, and garlic salt. Stir in 3 tablespoons of the apple juice from the ribs.
  3. Brush underside of ribs with 1/3 of the sauce. Turn them over, and place in roasting pan. Brush tops with remaining sauce.
  4. Bake in preheated oven for 25 to 35 minutes, brushing occasionally with sauce.

  • 4 pounds baby back pork ribs
  • 4 cloves garlic, sliced
  • 1 tablespoon white sugar
  • 1 tablespoon paprika
  • 2 teaspoons salt
  • 2 teaspoons ground black pepper
  • 2 teaspoons chili powder
  • 2 teaspoons ground cumin
  • 1/2 cup dark brown sugar
  • 1/2 cup cider vinegar
  • 1/2 cup ketchup
  • 1/4 cup chili sauce
  • 1/4 cup Worcestershire sauce
  • 1 tablespoon lemon juice
  • 2 tablespoons onion, chopped
  • 1/2 teaspoon dry mustard
  • 1 clove crushed garlic

Directions

  1. Preheat oven to 300 degrees F (150 degrees C). Place ribs on a rack in a shallow roasting pan. Scatter 4 cloves of sliced garlic over ribs. Cover, and bake for 2 1/2 hours. Cool slightly.
  2. In a small bowl, mix together white sugar, paprika, salt, black pepper, chili powder, and ground cumin. Rub spices over cooled ribs. Cover, and refrigerate overnight.
  3. In a small saucepan, mix together brown sugar, cider vinegar, ketchup, chili sauce, Worcestershire sauce, lemon juice, onion, dry mustard, and 1 clove garlic. Simmer over medium-low heat, uncovered, for 1 hour. Reserve a small amount for basting; the remainder is a dipping sauce.
  4. Preheat grill for medium heat.
  5. Place ribs on grill. Grill, covered, for about 12 minutes, basting with the reserved sauce, until nicely browned and glazed. Serve with remaining sauce for dipping.
